This weekend was DHs birthday, he doesn't really like cake, but I couldn't not make him a birthday cake after making ones for the kids this year. You can see these here and here. He says he doesn't like cake, but does however like carrot cake. I have never made carrot cake before so thought I would try one
It was easy, and tasted awesome.
Although whilst making it, I did have my doubts that it would be nice.
C helped me made the cake, and gave supporting words such as 'it looks like cat food' as we were mixing it.... Hmm thanks. Bear with me, it works and is blooming lovely.
Recipe as follows
270 ml vegetable oil 240g plain flour 1 1/4 tsp bicarbonate of soda 330g sugar 3 eggs Pinch salt 1 tsp ground cinnamon 300g carrots, grated
For the icing 120g cream cheese 100g caster sugar 60g butter, softened Halved walnuts to decorate
Preheat the oven to 160C/325F/Gas 3.
Grease and line a 26cm/10in springform cake tin
Mix all of the ingredients for the carrot cake, except the carrots together in a bowl until well combined.
Finally, stir in the carrots.
Spoon the mixture into the cake tin and bake for 1 hour, or until a skewer inserted into the middle comes out clean.
Remove the cake from the oven and set aside to cool. Leave for 10 mins and remove from the tin and set leave to cool completely.
While the cake is cooling, you can make the icing Beat the cream cheese, caster sugar and butter together in a bowl until fluffy. Spread the icing over the top of the cake with a palette knife.
When the cake is cool, cut in half , add the frosting and as a layer in between and on the top of the cake.
Eat, lots of it. Enjoy!
