Sooo it seems summer is over already... But for a taste of summer, try this.
Strawberries with meringue and cream
Or you could mush up to make an Eton Mess.
Super easy, and very tasty.
For the meringue
4 eggs - whites only
220g - castor sugar
Pre heat the oven to 200 degrees C / gas mark 6 / 400 degrees F
Separate the eggs, we are using the egg whites only, add these into a glass or ceramic bowl
Whisk the egg whites on low until frothy
Turn the whisk up the medium until the egg whites form stiff peaks
Add the sugar in small amounts to the mixture, whisk on high the sugar into the mixture
The mixture should now be glossy and white.
Take some baking parchment, and dollop the mixture onto the parchment. (Or you can pipe if you like it neat)
Turn the oven down to 140 degrees C / gas mark 1 / 275 degrees F
Add the uncooked meringues to the oven.
Cook for 30 mins
When 30 mins has gone by turn the oven off, leaving the meringues inside to cool.
When cool take out of the oven.
The meringues are light, crunchy on the outside, and the inside is light and fluffy. Perfection I say.
