Tomorrow I have to get up early. Very early. Setting off at 5.30am (ouch) I have been trying to get into the habit of eating breakfast. But that is too early to eat. So instead of paying a fortune at motorway service stations, I thought I would make my own power packed breakfast bars.
This recipe isn't mine it is one from the River Cottage everyday book, here it is
125g unsalted butter 150g soft brown sugar 125g peanut butter 75g honey Zest of 1 orange and 1 lemon 200g porridge oats 150g dried fruit (I used a tropical mix) 150g mixed seeds (such as pumpkin seeds, poppy, sunflower etc..)
What to do?
Put on to warm the oven 160 degrees C / gas mark 3
Grease and line tin approx 20cm square
Pop the butter, sugar, peanut butter, lemon and orange zest and honey in a saucepan. Put on low heat until melted
Mix the dry ingredients - oats, dried fruit, seeds in a bowl
Add the melted ingredients into the dry and mix
Pop mixture into the lined tin and press down
Put in oven for 30 mins until golden
Leave to cool and cut into 16
The bars will keep in an airtight container for about 1 week.
Cost for 16 was around £4.00, per bar works out to be 25 pence each.
Much more cost effective than motorway services and good for you!
