It is the school holiday, and today I had a few hours to myself when I saw dried mandarins in the supermarket, I decided to make
Ingredients for 30 pieces
250g unsalted butter, melted 450g light brown sugar 2 large eggs 3 teaspoons vanilla extract 1/4 teaspoon salt 280g plain flour 150g white chocolate chopped into chunks 80g dried mandarins chopped into pieces Zest of small orange
How Heat oven to 180 degrees c Butter and / or line a 40 x 20 cm baking tray with parchment paper. In a bowl, mix together melted butter and sugar until smooth. Stir in eggs, vanilla, extract and salt. Add flour and stir until all added Add the chopped white chocolate and mandarin and orange zest, stir until well combined Pour the mixture into baking tray and pop in the oven for 25-30 minutes until a skewer inserted into the middle comes out quite clean. Cool for at least 1 hour before cutting into 30 pieces.
The result? Oh my days, they are amazing. I know i shouldn't really be gushing about something I have made, but they really are. A gooey blondie with a hint of orange and white chocolate Sublime.
