6! She wanted a few of her girlfriends around to our house, for craft, dancing to One Direction and eating, she thought it was perfect.
And of course, pink lemonade!
She wanted a piñata cake for her birthday cake.
A mild disaster with the icing, but overall it turned out well.
Here is how I made it.
350 g self-raising flour 350 g caster sugar 350 g soft butter 2 rounded teaspoon baking powder 6 large eggs 1 teaspoon vanilla extract
For the buttercream icing 280 g softened butter 280 g icing sugar 1-2 tbsp milk (if the mixture is a too thick) Food colouring
For the inside of the cake Smarties - lots
Pre heat the oven to 170 degrees C
Add all ingredients into a bowl and combine using an electric hand whisk
Separate the mixture between 3 x 20 cm wide cake tins
Put the cake tins into the oven and bake for approx. 30 mins, test with a metal skewer they are done, if the skewer comes out clean they are done, if not, put in the oven for another 5 mins.
When the cake is cooked, take out of the oven and cool on a cooling rack
When the cake is completely it is time to assemble
Put the first layer of cake and add buttercream icing to the top of it
Add the next layer of cake and cut medium sized hole in the centre of the middle cake layer
Add smarties into the hole
Put buttercream over the top of the 2nd cake layer
Add the top cake layer
And then buttercream decorate (this is where my skills are really lacking! If I was going to make this again, I would use roll out sugar paste icing instead, well you live and learn)
Here is the final cake, she was very happy with it.
