It is blackberry season already!
And, what a bumper season it looks like it will be this year. So many shiny black jewels on brambles at the moment.
Here is an easy recipe to make a scrummy blackberry cordial.
It goes perfectly with sparkling water or lemonade.
Also it goes very well with gin or vodka, mmmm.
Here is how you make it (can be up or downscaled as necessary) with this recipe we made 1 1/2 litres of blackberry cordial.
Ingredients 1 kg blackberries Juice from 1 orange 240 g sugar (120 grams for each 500 grams of blackberries) Water
How Wash the blackberries
Place the blackberries in a large pan and cover with water
Put the pan over the heat and boil until the berries are mushy (you can use a masher to help with this if you want to speed up the process)
When the blackberries are soft and have burst, take off the heat and strain the juice through a sieve to remove all the pips and other large pieces
When the liquid has been strained, add back into a pan and add the orange juice and sugar
Put the pan back over the heat, and bring the liquid to the boil until all the sugar dissolves.
When the sugar has dissolved take off the heat and leave to cool
Meanwhile, sterilise a bottle / bottles
Add the blackberry cordial to the sterilised bottles.
