Winter, I think really is the season for slow cooking. Here is a super easy and tasty recipe for a curry made in the slow cooker.
Ingredients 6-8 boneless chicken thighs 1 large onion 2 cloves garlic Fresh ginger about a 2 cm piece 1 tin chopped tomatoes 2 tablespoons tomato puree 1 tablespoon garam masala 2 teaspoons paprika 1 teaspoon tumeric 1 teaspoon chilli powder (more if you like a hot curry) 1 teaspoon fennel 100 ml coconut milk 1 teaspoon salt Handful spinach
How? Add the tin of tomatoes into the slow cooker with the tomato puree, garam masala, paprika, turmeric, chilli powder, fennel and salt. Stir the all together Cut chicken thighs into chunks and add into slow cooker Dice the onion and add into the slow cooker Grate the ginger and mince the garlic and add to the slow cooker. Give everything a good stir
Pop the slow cooker on for 4 hours on high or 8 hours on low.
About 20 mins before eating add the coconut milk and stir, and add the spinach.
As easy as that!
