Baby courgette and spinach warm salad

At this time of year, courgettes are nice and small and if eaten now can be very sweet. 

And, to keep picking them when they are small and you shouldn't have a great glut later in the year.

I picked some tiny yellow courgettes from the plot and wanted to make something delicious.

(ignore the strawberries in the picture, they don't come into the recipe)

I served this as a side dish as part of a larger salad and meat combination, but it can easily be scaled up and made into a main dish

What is needed?

1 small onion

A few baby courgettes

Handful of spinach leaves

1 sage leaf

1 or 2 cloves of garlic

A good glug of olive oil or butter



Slice the onions, roughly chop the spinach, thinly slice the courgettes and chop the sage

Heat the olive oil in a pan and drop in the sage when the oil is getting hot, leave for a few seconds before adding the onions.

Sweat the onions for a few minutes before adding the baby courgettes and spinach.

Cook for a further few minutes, and it is ready. 


A very quick, delicious warm salad.

The flavour combination is very delightful.  The sweetness of the courgettes and onions mixed with sage flavour works very well.  I can see this will quickly become a weekly favourite that I cook.
